The Southern Belle


This is absolutely amazing!


Rose's Southern Belle
is
the perfect dessert for summer weather.
Instead of the genoise cake base
I used Ladyfinger sponge cookies.
To me they are similar
in flavor.
And it made it quick and easy
to put together.
The flavor profile is wonderful
with the the almond extract.
I topped it with
rum whipping cream.
A huge success!

Cream Cheese Butter Cake

The Case of the Disappearing Lemon Cake


Yesterday my nine and half year old 
granddaughter
wanted to bake.
She's been baking
Rose's recipes
with me
since before
her
second birthday.

So we made the
Q&E
Cream Cheese Butter Cake

She had a blast.
There are no pictures.
Alas, 
there is no cake.


After cutting for a 
side picture
which of course
involved tasting,
she pleaded
to take it home
for a barbecue.
How could I refuse?
I will say
from the taste testing
this cake
is amazing.
Now I'm making
a second one
for my brother's
birthday.
The Lemon Curd
Buttercream frosting
is delectable.

Perfect Savory Cream Puffs


This has to be the easiest 
cream puff recipe.
It is literally full proof.
No soggy middle here.


Simple stirring together of
water, butter, salt, sugar and flour 
over heat.
The saucier pan really 
pulled it's weight.


Dough on parchment
ready for the oven.


Rose has a great method of 
first baking the puffs
 at a higher temperature,
then
lower temperature
and finally no
no temperature at all.
It only requires patience.


Filled with egg salad 
they are delectable.

I'm so happy to
be able to make
cream puffs 
and be assured
they won't be a soggy mess.

Flaky Scones


I forgot geometry is not my forte,
hence these are
not perfect triangles.
They are, 
however,
completely delicious!
Not sure they
would pass muster
for flakiness
at the
county fair judging
but 
they are better
than anything at Starbucks.


The dough really gave me
a bit of anxiety.
It was too dry so I added
a little more cream
into the flour, sugar, baking powder,
baking soda, salt
and
grated butter.

I had my doubts 
this would work
but after a few fold overs
and rolling,
it came together.

Into the oven
and 
then a cool down between 
tea towels.


Voila!


For someone
who loves scones
but could never get them right,
this is another win
with one of Rose's
scone recipes.

Blueberry Crumb Party Coffee Cake



This Blueberry Crumb 
Party Coffee Cake
is 
everything a crumb cake should be.

Rose's butter sour cream 
batter is divine.
The cinnamon-y walnut
topping is
just how I like it.

Scoot on over
to Marie's
for 
a look at the process.


I had to pop it back in
to brown a bit more.
I also sprinkled some additional
 tiny blueberries
over the top when it came
out of the oven.
The heat was enough to 
cook them through.

This is a definite
make again recipe.
